Cherry Cake vol 2

Last night I made a cherry cake. Since I´m in the UK now then I can´t use exactly the same ingredients as in Estonia any more and so I changed the recipe a bit.

Eile õhtul tegin jälle kirsikooki. Kuna ma hetkel olen UK´s ning seega pidin natukene teisi koostisaineid kasutama kui Eestis ning retsepti veidi muutma. Tulemuseks oli seega seekord hoopis kirsi-toorjuustukook.

So for my cherry cake vol 2 you will need:

  • Chocolate Fudge Cake Mix ( I used Wrights Chocolate Fudge Cake Mix 500g)
  • soft cheese ( I used Philadelphia Light Soft Cheese 2 x 280g)
  • 60-70g unsalted butter
  • 3 eggs
  • ~ 500g frozen or canned cherries
  • ~1dl of sugar and some vanilla

Preheat the oven 200C. Mix cake powder and unsalted butter so it becomes crumbly. Next mix soft cheese, eggs, sugar and vanilla and then add cherries. Put grease-proof paper into the cake pan and then add 2/3 of the butter & cake powder mix into the cake pan. Then add the soft cheese & cherries mix and butter and cake powder mix. Put the cake into the preheated oven and bake it about 30 minutes. When the time is up let the cake cool and keep it in the fridge overnight.

Minu kirsikoogi vol2 jaoks läheb vaja:

  • Šokolaadikoogi pulbrit (viimane kord kui Eestis seda kooki tegin siis Erika tordipulbrit ma leida ei suutnud ja seega kasutasin hoopis šokolaadimuffini pulbrit)
  • 60-70g võid
  • toorjuustu (mina kasutasin 2 x 280g Philadelphia Light toorjuustu)
  • 3 muna
  • ~500g kirsse
  • ~1dl suhkrut ja veidi vaniljet

Eelsoojenda ahi 200C. Sega  koogipulber võida nii, et tekiks selline purutaoline mass. Edasi sega toorjuust, suhkur, munad ja vanilje ning lisa kirsid. Vooderda koogivorm küpsetuspaberiga ning pane vormi 2/3 tordipulbri ja või segust ning siis lisa kirsside ja toorjuustu segu. Edasi lisa koogile ülejäänud koogipulbri ja või segu ning pane eelsoojendatud ahju küpsema umbes 30 minutiks. Kui kook on valmis küpsenud, siis jahuta ning hoida öö läbi külmkapis.

    Sounds very good to me! I like anything with fruit in it. I find it interesting that you can’t find the same ingredients in the UK as you could in Estonia–which ingredient was it?

      One of the ingredients was the cake powder. The one that I used in Estonia is made in Estonia and so it is not sold in UK. And because of the different cake powder I had to use less butter.

    I’m not a fan of cherries and chocolate, but I bet this would also work with a vanilla cake mix. Easy dessert recipes are always appreciated!

    That looks amazingly yummy! I’m not a huge fan of cherry flavor, but real cherries are okay. I wonder if you could use a different fruit.

      You can! Last week I made it with blueberries, too, and it tasted great!

    That cake looks incredible. I love to bake and am always looking for new recipes that people won’t expect when I bake them up. This cake looks like it would definitely drop some jaws.
